Ingredients

For 12 spring rolls

  • 12 sheets of rice paper
  • 200 grams of large shrimps, peeled and boiled
  • 1/2 head of iceberg lettuce
  • 1/2 cucumber, julienned or thinly sliced
  • 50 grams salted peanuts, chopped
  • 100 grams of carrot cut into julienne
  • 100 grams of noodles
  • Fresh herbs such as: mint and coriander

For the sesame soy dressing

  • 100 ml soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons fish sauce
  • 1 tablespoon of honey
  • 2 cloves garlic, crushed
  • 2 tablespoons roasted sesame seeds
  • Optional: Sriracha sauce to taste for some spice

Preparation method

1 - Preparation of the ingredients
Start by preparing all the vegetables and cooking the noodles according to the instructions on the package. Let the noodles cool. If the shrimp are not already cooked, cook them and let them cool.

2 - Make the dressing
In a frying pan, fry the pressed garlic in the sesame oil and turn the heat down to low. Then add the sriracha sauce, soy sauce, fish sauce and honey. Stir well until the honey has dissolved and then add the sesame seeds. Set aside to cool and let the flavors blend.

3 - Roll your spring rolls
Fill a large bowl with warm water. Dip a sheet of rice paper in the water for about 20 seconds until it is flexible. Carefully place the sheet on a clean, wet tea towel. Place a handful of lettuce in the center, followed by some noodles, cucumber, carrot, pepper, peanut crumbs and a few shrimp. Add a few mint and coriander leaves for extra freshness.

4 - Roll the spring rolls
Fold the bottom of the rice paper over the filling, then fold the sides in, and roll up tightly. Repeat this with the rest of the ingredients.

5 - Serve
Serve the spring rolls with the sesame soy sauce dressing on the side for dipping.

Tips for the perfect spring rolls:

  • Make sure the water is not too hot when soaking the rice paper sheets; this makes them too soft and difficult to handle.
  • Don't put too much filling on each sheet; this makes it more difficult to close the rollers neatly.
  • Prepare all ingredients in advance and place them in containers to facilitate the assembly process.
